Seppie saltate con piselli e bresaola

Ingredienti per 4 persone
Per le seppie:
350 g di pisellini novelli
300 g di seppie piccole
60 g di bresaola tagliata spessa
2 spicchi d’aglio
1 scalogno
1/2 peperoncino rosso
brodo vegetale (o acqua calda)
6 cucchiai di olio extra vergine
prezzemolo

Il pesce, il mare

Il pesce, nel bacino del Mediterraneo, ha un ruolo da protagonista da tempi antichissimi.Basterebbero le ragioni geografiche per spiegare l’enorme diffusione del pesce delle nostre zone: i molti chilometri di costa, affacciata su un mare ricco, hanno sempre spinto l’uomo a combattere la fame attraverso la pesca attingendo, anche se spesso con fatica, a una risorsa che sembrava illimitata. Si è venuto a creare così un rapporto molto stretto tra alcune popolazioni del Mediterraneo e il mare stesso, rapporto che in diverse zone dura tutt’ora.

Va fatta una prima grande divisione in “categorie” dei cosiddetti prodotti ittici: Pesci, Crostacei e Frutti di mare.

Il pesce vero e proprio si può dividere in altre due “categorie”: Pesce a carne grassa e pesce a carne magra.

• Merluzzo, dentice, trota, sogliola e spigola sono pesci magri (contenuto di grassi inferiore al 3%)
• Anguilla e salmone, invece, rientrano nella categoria dei pesci grassi (oltre il 9% di grassi)

Un’ ulteriore classificazione comprende i pesci che vivono in acque salate, che sono la maggior parte, e quelli d’acqua dolce.Vi sono poi pesci, una minoranza, che vivono sia in acque salate sia dolci, a seconda dei periodi dell’anno; il salmone è l’esempio più noto, dall’oceano Atlantico si sposta in fiumi europei o americani durante il periodo riproduttivo.

Consigli per la spesa

Sia che andiate da un pescivendolo molto frequentato o in un supermercato ben fornito, assicuratevi che ci sia sempre una selezione di pesce freschissimo.
Il pesce deve essere presentato su uno spesso strato di ghiaccio pulito; le etichette non devono mai essere conficcate nelle carni.
Se non vi lasciano sentire l’odore…
non compratelo!
